Today we made macaroons.  Not exactly a diet friendly food, but the coconut is a reduced fat coconut... so we are being penny wise.
They were surprisingly easy to make, and the finely grated coconut supple.  

The spring loaded ice cream scooper really helped to make them regular.  I like kitchen gadgets with fiber.


They didn't take on a very dark brown on the edges, but the bottoms were perfect, so we didn't complain too loudly.  
Tomorrow we bike!
